Ingredients        

500g exe self-raising baking flour

200g margarine

250 ml packed milk

8 eggs at room temperature

20ml vanilla

400g sugar

220g unsalted butter

100 ml cooking oil

A pinch of salt

100g icing sugar

  1. Grease your baking pans (two 8”) and set them aside. Preheat your oven to 177 degrees Celsius.
  2. As your oven heats, sift your baking flour. Add sugar, 50ml cooking oil, and a pinch of salt and whisk for about 1 minute.
  3. Transfer the mixture into an electric mixer and beat all your eggs, pour the milk, vanilla, butter, and mix them evenly.
  4. Pour half of the batter into one of the greased baking pans and the rest to the other.
  5. Place the baking pans in the oven and bake them for 40 to 50 minutes until golden brown.
  6. Use a skewer, toothpick, or cake tester to check if it’s evenly baked. If any of these testers don’t come out clean, then continue baking your cake for another five minutes.
  7. Remove the cakes and place them on a wire rack and allow them to cool.
  8. Sprinkle icing sugar on top with the help of a sieve, and slice your cakes as preferred.
  9. Enjoy with milk or juice. Store the remaining cake in an airtight container for up to two days or refrigerate for one week.
