Ingredients

2 green plantains

½ cup of coconut milk

1 star anise

1 tbsp butter

Sugar

Salt

4 ½ cups of water

1 cup of boiled milk

  4. Add your plantain puree and stir for four minutes until the mixture thickens. Add salt, vanilla extract and sugar and keep stirring for 12 minutes
  5. Reduce the heat and cook the porridge for 15 minutes. Taste to ensure the plantain is fully cooked and you have a creamy texture

1 pound beef liver (cubed)

2tbsp tomato sauce

¼ cup of cooking oil

2tbsp white vinegar

2 large onions (chopped)

2 lime (juiced)

Salt

3tbsp of Epis (Haitian seasoning base)

1.      Put your liver in a large bowl and add your lime juice. Mix thoroughly using your fingers, and set aside. Put water in a cooking pot and bring it to a boil

2.      Pour the boiling water over the liver to give it a quick blanch

3.      Drain the water and marinate with Epis for 10-15 minutes. Sauté your liver on a large saucepan until golden brown

4.      Add onions, salt, and tomato paste and stir for two minutes, add water half a cup and cook for about five minutes

5.      Reduce the heat and cook it for 5 minutes then serve with a hard-boiled egg and plantains

3. Ze Ak Bannann (Haitian Eggs And Plantains)

Ze ak Bannann is a sweet, spicy combination of eggs and plantains which makes a great pick to kick start your day. The combination is rich in carbs and proteins to keep your body fueled for longer. When you wake up late or in a rush, this recipe comes in handy.

Ingredients

3 semi-ripe plantains

4 eggs

2tbsp olive oil

3 tomatoes (diced)

1 tsp black pepper

Salt

2 green pepper (diced)

1 tbsp scotch bonnet pepper (diced)

1 tsp Adobo seasoning

1.      In a cooking pot, boil three cups of water and add salt. Cut the small ends of your plantain and slice it in half then add to the boiling water. Simmer for about 10 minutes

2.      In a large bowl, add salt, Adobo, pepper, and beat your eggs and whisk to ensure they are properly mixed

3.      Sauté your onions, tomatoes, peppers, scotch bonnet pepper for about five minutes

4.      Add the eggs and scramble for another five minutes. Drain your plantains and remove the peel. Place them on a platter and serve with your eggs

 4. Mais Moulin ak Zepina (Cornmeal and Spinach)

Mais Moulin ak Zepina is one of the versatile dishes which can be enjoyed along with other foods to give it a nutritional boost. The delicacy is usually served along with avocados for breakfast. You can also add a protein boost by accompanying it with eggs or fish.

3.      Add your cornmeal and stir for about five minutes. Reduce the heat and simmer for 10 to 15 minutes while frequently stirring to avoid clumping.

4.      Add water if need be. Serve while hot with sliced Avocados
