How To Prepare a Mouthwatering Kenyan Mukimo With Stewed Liver ( Irio)|African Cuisine

Mukimo, popularly known as irio is a Kenyan staple food associated mostly with the Kikuyu community. The dish is normally prepared by mashing a mixture of green maize, green peas/ chickpeas, potatoes, pumpkin leaves (kahurura), garlic, onions, white pepper, cooking oil and salt. Since the chickpeas and peas may seasonal, you can substitute them with beans. Bringing that mouthwatering mukimo on your table, you should be ready to spend more time mashing in order to attain the desired mixture.

And without much ado, let’s have a look at what you need.

Ingredients

  • 250g green maize (soft)
  • Green peas/ chickpeas/ beans 500g
  • Potatoes 1.5kgs
  • Salt 1tbsp.
  • Cooking oil 3tbsp.
  • Butter 2tbsp.
  • Onion 1 piece medium
  • 5-6 pumpkin leaves (medium)
  • 1 tbsp Garlic powder
  • 2 tbsp.White pepper

 

Preparation

  • Boil potatoes(in white peppered and salted water), maize, peas, and pumpkin leaves separately
  • Drain ¾ of the water from the potatoes and mash them thoroughly until you get a soft texture
  • Cut the onions into julienne pieces and add cooking oil into the cooking pan. Sauté them until golden brown
  • Add the onions and the garlic powder on to your already mashed potatoes and gradually mash them
  • Drain water from your maize, peas and add them into the potatoes and mash them together
  • Check the taste and the texture of the mukimo
  • Drain almost all the water from your pumpkin leaves and blend
  • Add the blended pumpkin leaves into the Mukimo and mix them thoroughly until you attain a greenish color

Tip: make sure you boil all your ingredients with salted water, and ensure that the liver is well cooked before consuming it.

How to prepare the stewed liver

Ingredients

  • 1 kgs liver
  • Tomatoes 4 pieces (medium)/ tomato paste 2tbsp.
  • Onions 2 pieces large
  • Cooking oil 3tbsp
  • Water 1.5 ltrs.
  • Soy sauce 2 tbsp.
  • Garlic 2 pieces
  • Coriander

 

Preparation

  • Cut the liver into desired pieces ( cubes)
  • Bring the liver to boil in salted water until you attain a soft texture
  • Chop the onions and tomatoes into fine cubes
  • Put onions, garlic, and cooking oil in the cooking pan and sauté them for one minute
  • Add the liver and cook it for another one minute, then add your tomatoes/ tomato paste
  • Let it cook for about 4 minutes, and add soy sauce until you attain a savoring aroma
  • Add 1 cup of water and simmer it for five minutes
  • Chop your coriander and add it on the stewed liver and stir gently
  • Ready to serve
