Cocada Amarela is an African tasty dessert that boasts of its tantalizing flavor. The recipe is one of the popular and most loved treats in Angola.

There are different variations of the recipe.

But the main ingredients are coconut and eggs. Other ingredients like sugar, water, turmeric, nutmeg, and whole cloves may be added depending on one’s preferences.

History of Cocada Amarela

Cocada Amarela means yellow Cocada. The dessert is said to have a strong influence from Portugal. However, though it has Portuguese influence, traditional African ingredients are used.

Some people like using honey instead of sugar. The vegan Cocada Amarela does not have eggs, so if you are a vegan, you can omit them.

The recipe is popular in Mozambique, Egypt, and Cape Verde and may vary from one country to another. Today, we feature the Angolan version. And here is what you need.

Ingredients

4 cups of sugar

1 cup rice pudding

6 egg yolks

2 cloves

1 tsp cinnamon powder

1 cup grated coconut

-Guide-

1. Put water in a saucepan. Add cloves and sugar and bring to a boil.

2. Stir the mixture for the sugar to dissolve. Reduce the flame and let it continue to boil for twenty minutes.

3. Set aside and remove the cloves. Add the coconut and stir. Return the mixture to heat and boil for another ten minutes.

4. Set aside and add your rice pudding and stir for an even mixture. Beat your eggs and whisk for a light smooth color. Pour the egg yolks on the mixture and stir again.

5. Grease a baking pan and transfer the mixture. Preheat the oven up to 1800 C.

6. Bake for twenty minutes, then spoon the Cocada Amarela into small bowls. Coconut shells can be used instead. Dust with cinnamon and enjoy.
